Our Wines

2009 Woodstock Chardonnay

Background

This Chardonnay was planted on Woodstock Estate in the mid 1970s on a south east facing, sandy site known as the Creek Block. Typical fruit tingle or sherbet flavours are created here because of the micro climate, clone and soils. Our aim is to capture the natural flavours of the variety, then enhance them with some time in oak and fermentation. Cellaring will greatly intensify the flavours adding complexity to this wine.

Winemaking

The grapes are picked when flavours are rich, and the natural acidity is still crisp. Free run juice and pressings are used to maximise varietal flavours. Some 10% of the wine is fermented in new French oak barrels for several months to impart subtle oak flavours. The wine is then left on yeast lees right until bottling, which adds complexity while retaining freshness. The best barrels are selected, and the wines filtered and blended just before bottling.

The Wine

A fruit driven wine showing hints of rock melon and peaches on the palate. There is notable fruit purity and an underlying minerality which appeals. Subtle oak and food flavours enhance the mouth feel adding complexity. These flavours linger on the palate and finishes clean with crisp acidity.

Serving Suggestion

Oven roasted tarragon chicken served with potato gratin and a fresh bowl of freshly peeled buttered peas
